Equipment

  • Large skillet
  • Medium pot
  • Baking sheet
  • Mixing bowls
  • 3-compartment meal prep containers with snap lids

Ingredients

  • 1 1/2 pounds lean ground beef (93/7)
  • 1 tablespoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1 1/2 teaspoons ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 15-ounce can black beans rinsed and drained
  • 1 15-ounce can corn drained
  • 7 1/2 cups cooked brown rice about 1 1/2 cups per portion
  • fresh cilantro, chopped to taste; for mixing into rice and garnish
  • lime juice to taste; for mixing into rice
  • fresh pico de gallo for topping
  • sliced avocado for serving
  • shredded cheddar cheese optional

Instructions

  • Cook brown rice according to package directions until you have about 7 1/2 cups cooked.
  • While rice cooks, brown the ground beef in a large skillet over medium-high heat, breaking it apart as it cooks.
  • Drain any excess grease, then add chili powder, garlic powder, onion powder, dried oregano, paprika, ground cumin, salt, and black pepper. Stir to coat the beef evenly.
  • Spread the drained corn on a baking sheet and roast at 400°F for about 10 minutes until slightly charred.
  • Stir chopped fresh cilantro and lime juice into the warm cooked rice; taste and adjust seasoning if needed.
  • Let the seasoned beef, rice, and roasted corn cool for at least 20 minutes before portioning to prevent condensation.
  • Portion 1 1/2 cups cilantro lime rice into the largest compartment of each meal prep container.
  • Add roughly 1/3 pound of seasoned ground beef to the second compartment of each container.
  • Combine the black beans and roasted corn, then divide evenly into the third compartment across all five containers.
  • Label each container with the prep date and refrigerate. Keep pico de gallo, avocado, and cheese separate to add at serving.

Notes

  • Storage: Refrigerate in sealed 3-compartment containers for up to 5 days; do not leave at room temperature for more than 2 hours.
  • Freezer: The seasoned ground beef freezes well for up to 3 months; thaw in the fridge. Avoid freezing fully assembled bowls as rice texture can suffer.
  • Reheating: Microwave 2–3 minutes on high with the lid vented; add 1 tablespoon water to the rice if dry. Remove pico and avocado before reheating and add after warming.
  • Serving cold: These bowls can be enjoyed cold straight from the fridge; keep fresh toppings separate until eating.
  • Low-carb swap: Use cauliflower rice if desired; portion it the morning of to avoid excess moisture during the week.
  • Make-ahead plan: Batch cook meat and rice simultaneously on Sunday, cool 20 minutes before portioning, and label with the prep date.
  • Anti-waste tip: Any leftover taco meat is great scrambled with eggs for breakfast burritos.
