Crisp Greek salad bowls designed for efficient Sunday meal prep—no cooking required and ready in about 15 minutes. Components are layered to stay crunchy and fresh for up to 5 days in the fridge, with feta stored separately to prevent sogginess. Perfect for busy professionals, students, or parents who need grab-and-go, customizable lunches all week.

Equipment

  • Glass meal prep containers with snap lids
  • Mason jar
  • Sharp knife
  • Cutting board
  • Measuring cups

Ingredients

  • 1 pint grape tomatoes halved
  • 1 large cucumber chopped into small cubes; English cucumber works best
  • 1 green bell pepper evenly diced
  • 0.5 red onion thinly sliced into strips
  • 0.5 cup Kalamata olives halved
  • 4 oz feta cheese crumbled from a block, not pre-crumbled
  • salt and freshly ground black pepper to taste
  • 1/3 cup red wine vinegar
  • 1 lemon juiced
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic finely minced
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup olive oil extra virgin

Instructions

  • Prep all vegetables: halve the grape tomatoes, cube the English cucumber, dice the bell pepper evenly, and slice the red onion into thin strips.
  • Make the lemon-oregano vinaigrette: in a mason jar combine red wine vinegar, lemon juice, Dijon, minced garlic, dried oregano, salt, black pepper, and olive oil. Shake well and let stand 10 minutes to mellow.
  • Divide about 2 tablespoons of dressing into the bottom of each of the 5 meal prep containers.
  • Layer cucumbers and bell peppers next; they handle contact with dressing best.
  • Add tomatoes, red onion, and Kalamata olives on top. Keep separated if your containers have compartments.
  • Crumble feta from a block and store it in a separate small container for each serving.
  • Label containers with the date, seal, and refrigerate.
  • To serve, add the feta, shake to distribute the dressing, and enjoy cold.

Notes

  • Storage: Keep layered salads refrigerated up to 5 days in airtight glass containers. Store feta separately (ideally in its brine) and add at serving time to keep everything crisp.
  • Do not freeze: Fresh vegetables lose texture and become watery after thawing.
  • Serve cold: No reheating needed. If the dressing thickens in the fridge, shake the container to redistribute and lightly warm it.
  • Layering order matters: Dressing on bottom, then cucumber and bell pepper, followed by tomatoes, onions, and olives on top.
  • Container tips: Use leakproof glass containers with snap lids; label with the prep date.
  • Protein add-ins: Serve with cooked lemon chicken or roasted chickpeas in separate containers and add just before eating.
  • Mason jar option: Layer dressing on the bottom and vegetables above; shake before eating for a portable, spill-resistant lunch.
  • Make-ahead timing: Chop and assemble on Sunday morning; allow cut veggies to drain for ~30 minutes before sealing to minimize moisture.
  • Anti-waste tip: Any extra chopped veg can be tossed with cooked pasta and feta for a quick dinner.
