These high-protein turkey burrito bowls are built for Sunday meal prep and hold up well for weekday lunches. Store the components in separate containers and they’ll stay fresh 4 days (sometimes 5) in the fridge; the seasoned turkey mixture also freezes up to 3 months. Ideal for busy professionals, students, and families who want fast, balanced lunches that reheat in minutes.

  • 1 tablespoon tomato paste
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon ground cumin
  • 1/2 tablespoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes optional, to taste
  • 1 teaspoon salt or to taste

  • 1/4 cup chicken broth low sodium preferred
  • 1 batch cilantro lime coconut rice or jasmine rice portion 1/2 cup cooked rice per bowl
  • black beans cooked or canned, rinsed; portion to taste
  • shredded romaine lettuce for serving
  • avocado sliced or diced, for serving
  • pico de gallo for serving
  • sour cream or Greek yogurt for serving
  • radishes, thinly sliced optional garnish
  • fresh cilantro leaves for garnish

Instructions

  • Heat oil in a large skillet over medium-high heat. Add ground turkey and break it apart with a wooden spoon.
  • Cook without stirring constantly until browned and no pink remains, about 8 minutes.
  • Add minced garlic and diced onion; cook until softened, about 3 minutes.
  • Stir in tomato paste, apple cider vinegar, cumin, chili powder, paprika, oregano, red pepper flakes, and salt until fragrant.
  • Whisk arrowroot starch into the chicken broth, pour into the skillet, and simmer until the sauce thickens, about 5 minutes.
  • Spread the cooked turkey on a sheet pan to cool completely before portioning to prevent condensation in containers.
  • Cook rice according to package directions (or prepare cilantro-lime rice); spread on a separate sheet pan to cool completely.
  • Portion 3 ounces cooked turkey and 1/2 cup cooked rice into each of 5 meal prep containers using a food scale for accuracy.
  • Store beans, lettuce, avocado, pico de gallo, sour cream or Greek yogurt, radishes, and cilantro in separate small containers.
  • Label with the prep date and refrigerate all components within 2 hours of cooking.

Notes

  • Cooling and safety: Cool turkey and rice completely on sheet pans before sealing. Follow the 2-hour rule from stove to fridge for food safety.
  • Storage: Keep components in airtight containers. Refrigerate up to 4 days (sometimes 5 if cooked very fresh on Sunday). Label with the prep date.
  • Freezer: Freeze the seasoned turkey mixture up to 3 months. Rice can be frozen if needed, but lettuce and fresh toppings don’t freeze well.
  • Reheating: Microwave turkey and rice together for 90 seconds, stir, then another 60 seconds until steaming. Add 1 tablespoon water to rice if it seems dry. Do not microwave cold toppings.
  • Portions: Aim for ~3 oz cooked turkey and 1/2 cup cooked rice per bowl; add beans and toppings to taste. Use a food scale for consistent calories.
  • Make-ahead tips: Dice toppings and portion into small lidded cups; keep lettuce and avocado separate to maintain texture and color. Add citrus (lime) to avocado or use it day-of.
  • Variations: Swap in cilantro-lime rice, add corn with the beans, or wrap the heated filling in a low-carb tortilla for a quick handheld meal.
