A high-protein turkey bolognese served over spaghetti squash that’s perfect for batch cooking and weekday lunches. Stores up to 5 days in the fridge and reheats in about 2 minutes without getting watery when the squash is properly pressed. Great for busy professionals, families, and anyone seeking a gluten-free, lower-carb meal prep option.

Equipment

  • Large oven-safe baking sheet
  • Parchment paper
  • Large deep skillet or Dutch oven
  • Glass meal prep containers with snap lids
  • Fork (for scraping squash)
  • Clean kitchen towel
  • Colander

Ingredients

  • 3 pounds spaghetti squash 1 medium to large squash
  • 2 tablespoons olive oil for roasting squash
  • salt to taste, for squash
  • 1 pound ground turkey (93/7)
  • 2 tablespoons olive oil for sauce
  • 1/2 cup carrots finely diced
  • 1/2 cup yellow onion minced
  • 1/2 cup celery finely diced
  • 1 teaspoon garlic minced
  • 1 cup brown mushrooms sliced
  • 3 tablespoons tomato paste
  • 28 ounce can crushed tomatoes
  • 1/4 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup grated Parmesan cheese for serving
  • 1/4 cup chopped Italian parsley for serving

Instructions

  • Preheat oven to 400°F. Halve the spaghetti squash lengthwise, brush the cut sides with olive oil, and season with salt. Place cut-side down on a parchment-lined baking sheet. Roast for 40 to 45 minutes, until a fork pierces the skin easily.
  • While the squash roasts, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the carrots, onion, and celery; cook, stirring occasionally, for about 8 minutes until softened and slightly golden.
  • Add the garlic and cook for 30 seconds. Add the ground turkey and break it up with a wooden spoon, cooking until no pink remains, about 6 to 8 minutes.
  • Stir in the mushrooms and cook until they release their liquid and reduce, about 4 minutes. Add the tomato paste and stir to coat everything, cooking for 2 more minutes.
  • Add the crushed tomatoes, oregano, salt, and pepper. Stir well, reduce heat to low, and simmer uncovered for at least 20 minutes, until thickened and flavorful.
  • When the squash is done, let it cool for 10 minutes. Use a fork to scrape the strands into a colander or onto a clean kitchen towel. Press out as much moisture as possible.
  • Portion into five glass meal prep containers: squash as the base, bolognese ladled on top. Add a pinch of Parmesan if packing now, or store cheese separately. Let containers cool fully before sealing.
  • Label each container with the prep date and refrigerate.

Notes

  • Storage: Refrigerate assembled bowls (squash + sauce together) in airtight glass containers up to 5 days. Do not leave at room temperature longer than 2 hours.
  • Freezer: Freeze the turkey bolognese sauce only (without squash) for up to 3 months. Roast fresh squash when reheating frozen sauce.
  • Reheating: Microwave covered for about 2 minutes (stir halfway) or reheat on the stovetop over medium-low for ~5 minutes with a splash of water. Stir any released liquid back into the sauce.
  • Moisture control: After scraping the squash, press firmly in a clean kitchen towel (or drain in a colander) to prevent watery containers by day two.
  • Cooling: Let sauce cool uncovered 20–25 minutes before sealing to avoid condensation and separation.
  • Meal prep timing: Roast squash while the sauce simmers to finish a full batch in about 65 minutes total. Portion into five containers for a Monday–Friday rotation.
  • Variations: Instant Pot bolognese (15 minutes high pressure) while squash roasts; low-carb option by doubling sauce per container and reducing squash.
  • Kid-friendly tip: Pack Parmesan (or preferred cheese) in a small side container for customizable bowls.
  • Anti-waste tip: Use leftover bolognese over a baked potato or toss with pasta if you run out of squash.
