Juicy pan-seared then oven-finished turkey burgers built for meal prep so they don’t dry out. They keep up to 4 days in the fridge and freeze well for 3 months, making stress-free lunches or weeknight dinners. Great for busy parents, macro-conscious eaters, and anyone who wants a reliable high-protein make-ahead option.

Equipment

  • Large mixing bowl
  • Cast iron skillet or heavy pan
  • Baking sheet
  • Parchment paper
  • Wire cooling rack
  • Glass meal prep containers with compartments
  • Instant-read thermometer
  • Toaster oven (for buns, optional)

Ingredients

  • 1 pound ground turkey 93% lean
  • 1 tablespoon mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 3 cloves garlic finely minced
  • 1 teaspoon kosher salt
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons extra-virgin olive oil for cooking
  • sliced cheddar cheese for topping, stored separately
  • tomato slices stored separately
  • onion slices or caramelized onions stored separately
  • pickle slices stored separately
  • lettuce leaves stored separately
  • ketchup, mustard, or extra mayonnaise for serving, to taste
  • whole wheat burger buns optional, toast just before serving

Instructions

  • Preheat oven to 375°F and line a baking sheet with parchment paper.
  • In a large bowl, gently mix ground turkey, mayonnaise, Dijon mustard, Worcestershire sauce, minced garlic, kosher salt, and black pepper until just combined.
  • Divide into 4 equal portions and form ¾-inch-thick patties. Press a small indent in the center of each patty.
  • Heat olive oil in a cast iron skillet over medium-high heat. Sear patties for 2 minutes per side without moving to develop a crust.
  • Transfer patties to the prepared baking sheet and bake 12–15 minutes, or until an instant-read thermometer reads 165°F in the center.
  • Cool burgers completely on a wire rack for at least 30 minutes before storing.
  • Portion one patty per meal prep container. Store toppings (cheese, lettuce, tomato, onion, pickles) in separate compartments or small containers. Label with the prep date and refrigerate.

Notes

  • Storage: Refrigerate cooked patties in airtight containers at or below 40°F for up to 4 days. Keep buns and fresh toppings stored separately to prevent sogginess.
  • Freezer-friendly: Wrap cooled patties individually in parchment and place in labeled freezer bags; freeze up to 3 months. Thaw overnight in the fridge before reheating.
  • Reheating: Microwave on a plate covered with a damp paper towel for 60–90 seconds, or reheat in a 350°F oven for 8–10 minutes. For stovetop, add a splash of water, cover, and heat until warmed through.
  • Cooling matters: Let burgers cool completely on a wire rack (about 30 minutes) before sealing to avoid condensation and spoilage.
  • Serve tips: Toast buns just before eating for best texture, or serve as burger bowls with prepped salad and roasted veggies.
  • Batch cooking: Double the recipe using two skillets to sear, then finish on sheet pans to save time. Label each container with the prep date.
  • Anti-waste idea: If nearing day 5, crumble patties with taco seasoning for quick taco bowls.
